How to make Neapolitan Cupcakes
Ingredients:
> Cocoa Powder 1/3 cup
>Baking Soda 1/2 tsp
>Boiling water 1/2 cup
>Unsalted Butter 1/4
>Oil 2 1/2 tbsp
>Caster Sugar 3/4 cup + 2 tbsp
>Vanilla Essence 3/4 tsp
>Salt 1/4 tsp
>Egg 1
>Egg Yolk 1
>Cream 1/4 cup
>Flour 1 cup
>Corn Flour 1 tbsp
> Unsalted Butter 7 tbsp
>Caster Sugar 3/4 cup
>Vanilla Essence 1 tsp
>Egg White 3
> Milk 1/2 cup
Frosting :
>Strawberry Puree 1/2 cup
>Unsalted Butter 1/2 cup
>Salted Butter 1/4 cup
>Icing Sugar 2 1/2 cups
>Red Food Coloring 4 Drops
Method:
For the chocolate cupcake:
Whisk together cocoa powder and baking soda.Carefully pour in boiling water and whisk until well blended, allow to cool for 5 mints .Beat in another bowl melted butter ,oil,caster sugar vanilla and salt until well combined .Stir in egg and egg yolk.
Blend in cocoa mixture then blend in cream .Slowly mix in flour spoon 2 tbsp of batter into bottom of paper lined muffin cups and spread into an even layer ,set aside .
For the Vanilla Cupcake :
In sifted flour ,add cornflour ,baking powder and salt .Beat butter and sugar with vanilla essence until pale and fluffy .In separate bowl whisk together milk ,egg whites and vanilla essence until well blended .Combine well till a smooth batter is achieved.Gently put the vanilla layer over the chocolate and carefully spread batter evenly to edges .Bake in preheated oven at 180 C Degrees Or until toothpick inserted into center of cupcake comes out clean ,about 16 -19 mints .Cool and then pipe or spared strawberry frosting over cupcakes,For the frosting and strawberry puree to a saucepan .Heat until reduced to 3 tbsp.About 8 mints ,Then freeze, Beat unsalted and salted butter until very fluffy .Mix in 1 cup lcing sugar ,then blend in 3 tbsp reduced strawberry puree.Vanilla essence ,and red food coloring .Add remaining 1 1/2 cups lcing sugar and continue to mix until frosting is pale and fluffy ,adding in an additional 1/4 cup powdered sugar if needed to reach desired consistency .
