Fish banh mi sandwiches 2022 best recepice of the year

Ingredients:

Pickled vegetables

160 ml white wine vinegar

125 ml sugar

dried chilli flakes — smoked

2 carrots — peeled

6 radishes — thinly sliced

For the fish

15 ml turmeric — ground

15 ml chinese five-spice powder

4 hake — fillets

salt and freshly ground black pepper

To serve

4 crusty rolls or half baguette rolls

80 ml sour cream

250 ml micro herbs

250 ml cucumber — jullienned

1 jalapeños — thinly sliced

sriracha sauce

Method:

For the pickled vegetables, combine the vinegar, sugar and chili flakes in a small saucepan over medium heat.


Heat until the sugar has melted and simmer, 1 min.


Cut the carrots into julienne strips and add it to the vinegar mixture together with the radishes.


Set aside for at least 30 mins, or cover and leave in the fridge overnight.


For the fish, combine all of the spices and sprinkle the spice mixture over the fish, covering both sides of each fillet.


Cook the fish on a braai grid, over medium coals, for 10 mins.


Turn the fillets over and cook for a further 6-8 mins until firm and cooked through.


Season lightly and flake the fish into bite size pieces.


To serve, slice the baguettes open on the top and spread the inside with sour cream.


Add some baby herb leaves, fish, pickled vegetables, cucumber and jalapeños on top.


Add a drizzle of Sriracha, if preferred.


TIP:

The hake can easily be replaced with a firm fish of your choice such as yellowtail, snoek or kingklip.


Lamb tikka flatbreads 2022

Ingredients:

2 tbsp tikka masala curry paste

1 tbsp olive oil

4 lamb steaks — cut into strips

1/2 red onion — thinly sliced and soaked in 3 tbsp red wine vinegar

1 handful rosa tomatoes — quartered

4 naan breads

butter — optional

1 hanful fresh mint — to serve

Cumin yoghurt sauce

1 tsp ground cumin

1 cup double cream plain yoghurt

1 tbsp fresh lemon juice

salt and black pepper — season to taste

Method:

Mix the olive oil and curry paste together. Brush the curry paste mixture over the lamb and allow to marinate.


Make the cumin yoghurt sauce by mixing the sauce ingredients together. Set aside.


Heat oil in a large frying pan over a medium heat. Fry the lamb for a minute or two, or until cooked to your liking.


Heat the naan bread in a clean pan with butter.


To serve, dollop some of the yoghurt sauce on each naan bread, top with lamb, followed by tomato, red onion and mint.


For a final finish drizzle with some more yoghurt and enjoy while hot...

How To Make Quick and Easy Pancit 2022

Ingredients:

1 (12 ounce) package dried rice noodles

1 teaspoon vegetable oil

1 onion, finely diced

3 cloves garlic, minced

2 cups diced cooked chicken breast meat

1 small head cabbage, thinly sliced

4 carrot, thinly sliced

¼ cup soy sauce

2 lemons - cut into wedges, for garnish

Directions Instructions Checklist:

Step 1

Place rice noodles in a large bowl and cover with warm water. Let soften for 8 to 10 minutes. Drain and set aside.

Step 2

Heat oil in a wok or large skillet over medium heat. Sauté onion and garlic until soft. Stir in chicken, cabbage, carrots, and soy sauce. Cook until cabbage begins to soften. Toss in noodles and cook, stirring constantly, until heated through.

Step 3

Transfer pancit to a serving dish and garnish with quartered lemons.

Roast leg of lamb with orzo pasta 2022

Ingredients:

2.5 kg leg of lamb — bone in

2 tsp salt

1 tsp black pepper

2 tbsp tomato paste

4 tbsp olive oil

2 onions — finely sliced

2 garlic cloves — peeled and sliced

250 ml white wine

400 g tinned tomatoes — chopped or 450 g fresh ripe tomatoes

1 lemon — juiced

1 tbsp dried oregano

5 cup lamb stock

500 g orzo pasta — uncooked

250 g feta cheese

fresh oregano — to garnish

vine tomatoes — to serve

Method:

Pre-heat the oven to 220°C.


Pat the lamb dry and rub with the tomato paste and season with salt and pepper.


Place the lamb in a large roasting pan.  Pour the oil all over the lamb. Add the onions, garlic, white wine, tomatoes, and lemon juice.  Sprinkle the lamb with oregano.


Add 3 cups of stock to the pan. Cover the roasting pan with aluminum foil and bake for 1 hour 30 minutes.


After 1 ½ hours, take the meat out of the oven, leaving the oven on, turn the meat around on its uncooked side and add 2 cups hot boiling stock and the pasta to the roasting pan.


Stir the pasta into the meat juices and place back into the oven for a further 50 minutes.  Take it out halfway and stir the pasta if it looks dry add some more liquid.


Add the feta to the pan and bake for a further 10 minutes until the cheese is soft and melted. Garnish with fresh oregano. Serve with baby vine tomatoes.

 Ingredients:

boneless skinless chicken breasts 24 oz


vegetable oil ¼ cup


Classic Chicken Pot Pie


all-purpose flour ⅓ cup


butter ⅓ cup


chicken broth 1 ¾ cups


chicken 2 ½ cups


chopped onion ⅓ cup


frozen peas and carrots 10 oz


milk ⅔ cup


pepper ¼ teaspoon


Pillsbury pie crusts 1 box


salt ½ teaspoon

Steps 1:

Heat oven to 400°F. Line 18x13-inch rimmed sheet pan with cooking parchment paper. In large bowl, mix 1 tablespoon of the oil and the salt. Add potatoes to bowl; toss to coat and place skin-sides down in single layer in pan. Set bowl aside. Roast 15 minutes. Remove from oven; stir.

Meanwhile, combine remaining 3 tablespoons oil and the seasoning mix (from box) in same large bowl. Add chicken; turn to coat. Place chicken in pan with potatoes. Roast 22 to 27 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and potatoes are very tender and browned.

3:

Drizzle with sauce (from box). Top with tomatoes, cheese, onions and basil.


Tips from the Betty Crocker Kitchens:

Mozzarella balls come in many sizes. We used 1/2-inch "pearl" mozzarella balls, but other types of fresh mozzarella work equally well. If using larger pieces of mozzarella, cut it into 1/2-inch pieces.

tip 2

The key to crispy, yet tender potatoes in this sheet pan Mediterranean chicken and veggies dish is cutting them into similarly-sized pieces for even cooking. If some of your potatoes are large, cut them into sixths.

tip 3

To take the bite out of raw onion, rinse cut onion in cold water for 30 seconds, then drain thoroughly.
